Mississippi Mud Cookies


Here is a delicious cookie that’s a little different.
Give this recipe a try. I’m positively sure you’ll like them.

1 cup semisweet chocolate chips
1/2 cup butter, softened, not melted
1 cup sugar
2 large eggs
1 teaspoon vanilla
1- 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup chopped pecans (or walnuts)
1/2 cup milk chocolate chips
3 mini marshmallows per cookie, white or colored

1. Microwave the semisweet chips until smooth, stirring every 30 seconds.
(Approx. 1 minute.)
2. Beat butter and sugar until creamy. Add eggs beating after each one until blended.
3. Beat in melted chocolate and vanilla.
4. Combine the flour, baking powder, and salt.
5. Gradually add to chocolate mixture, beating until well blended.
6. Stir in the chopped nuts and the milk chocolate chips.
7. Drop by heaping tablespoonfuls onto parchment paper lined baking sheets.
8. Press 3 marshmallows into each portion of dough.

Bake at 350 degrees for 10-12 minutes or until they are set.
Remove to rack to cool. Makes approx. 3 dozen
