Homemade Vanilla Wafers

I found this recipe for homemade vanilla wafers on the internet and just had to give them a try. They are delicious. And so much cheaper than the boxed variety too! Great for “kid snacks” and all kinds of recipes. No preservatives either!

To make them more “crunchy” like the store-bought ones, you just leave them in the oven a little longer until they are completely golden. I took mine out just when the bottoms were golden, so they’re a little softer on the inside. Either way they are excellent. Can be doubled and tripled.


1/2 cup butter (softened)

1 cup sugar

1 egg

1-1/3 cup flour

3/4 tsp. baking powder

1/4 tsp. salt

1 Tbls. vanilla

Cream butter & sugar. Beat in egg and vanilla.

Combine dry ingredients, add to creamed mixture and mix well.

Drop by small spoonfuls 2” apart onto an ungreased cookie sheet.

Bake at 350 degrees for 12-15, or until edges are golden brown.

Remove to wire rack to cool.

Makes about 3-1/2 dozen.
